The next few items I’m suggesting in this post however are Florentine Cuisine you can try if you dare. And top on the list is none other than Trippa alla fiorentina which means strips of tripe.

Tripe from Italian trippa is a type of edible offal from the stomachs of various farm animals braised in tomato sauce and garlic.


Usually sold in roadside stalls like this, it is probably the first time I seen roadside stalls in Italy too. To the Europeans, eating offals is probably something too daring to stomach but as Asians, it should not come as a surprise especially since pig intestines soup is my favourite soup (although I don’t really like some other offals dishes). So Tripe to my taste bud is not as scary as what the guide has claimed it to be.


Next on the list is the special Tuscan bread. Tuscan bread is traditionally made without salt, and it’s been this way since the 12th century, according to one popular legend. That legend says that during the historical rivalry with Pisa, the Pisans thought blocking shipments of salt would force the Florentines to surrender in whatever battle they were involved with at the time. Instead, the people of Florence just made their bread without salt.
I am unable to verify if the legend is true, but what remains true is the fact that many recipes today that incorporate Tuscan bread benefit from the bread’s lack of salt. As Italians have the habit of soaking their bread to finish up what is left on the plate, the salt-free bread soaks up all the fantastic flavours of the dishes without competing with them. However being unique, it may not be to everybody’s liking. But for health conscious people, I think Tuscan bread can top my favourite list haha.
